Do you know what great fish looks like? During this course we will show you how to identify quality points in fish, and ensure you know what to buy. We will teach you preparation and cooking techniques of flat and round fish, ensuring maximum eating quality and flavour. 

Course includes:

  • Arrive at 9.45am for tea, coffee and course introduction
  • Fillet 2 mackerel (make a pate and Cured)
  • Make Potted shrimp
  • Fillet sole/ plaice
  • Fish Stock
  • Fish Pie
  • How to smoke fish
  • Beetroot Salmon gravlax
  • Take home some of the food you have made and all course notes and recipes
